1.) In a bowl, mix the salsa, lime juice, cilantro and water.
2.) Place coconut oil in a skillet on medium heat. When oil is melted, arrange chicken in the skillet.
3.) Pour salsa mixture over chicken.
4.) Cook for 5-6 minutes per side, or until cooked through.
This recipe can be served several ways. It can be used as taco meat if shredded, or it can be served alone with refried beans, guacamole (guacamole recipe), or veggies. Put it in a tortilla with all the fillings for a burrito. It’s a tasty, all-purpose, and healthy way to have chicken. For Whole30, put it in a romaine leaf with guacamole and olives.
This recipe can easily be made in a crock pot as well by placing all the ingredients in a slow cooker for 6-8 hours.
